Classic Menu

Breakfast: Marmalade Fruit Medley

A medley of fresh fruits served with strained yoghurt and a fruit marmalade. This medley is high in Vitamin C due to its citrus content. It also includes Papaya which is rich in antioxidant nutrients such as carotenes and B vitamins.

Lunch: Cod Go-Go

The cod is cooked with a homemade tapenade and crushed walnuts to give it a crunchy roasted taste and texture. The tapenade is made from black olives and Omega 3 rich Olive oil. The roasting process infuses the fish with the flavours of the oil and the olives. This wonderful fusion is served with spinach and roasted pumpkin julienne.

Afternoon Snack: Capri Salad

Made with roasted mushrooms, artichokes and goat's cheese ball topped with pine nuts. An adequate intake of copper is important for good health. Pine nuts are a rich source of copper.

Dinner: Spaghetti Bolognaise

Wheat free pasta served with a tomato bolognaise sauce made to Mama's recipe. The only change we have made to this ancient Italian recipe is to use minced chicken instead of minced beef. We use minced chicken made from chicken breasts of French Label Rouge chickens because this brand guarantees that the chickens will be of the best free range organic quality.

Evening: SnackBerry Flan

A home made vanilla flan made from free range eggs and served with mixed berries to create a wonderful fusion between an old French dish and a nouvelle cuisine creation.
